I can't remember who approached me at Bath asking for my fruit cake recipe. I was going to ask around at Brecon but became preoccupied with trying to keep warm. Here it is anyway, enjoy.
Ingredients:
12 oz mixed dried fruit 4 oz Sugar (it says caster on the recipe but I just use granulated) 4 oz Butter or margarine (never tried it with margarine) 150 ml water 1 medium egg. 8oz self raising flour
Heat oven to 150c, 300f, gas mark 2, grease a 7" cake tin Place fruit, sugar, margarine and water in a pan, simmer slowly with the lid on for 20 mins Allow to cool then add the beaten egg and stir in the flour. pour into tin and bake for about 1 and a half hours.
(We have a gas cooker and I found the top of the cake would get burnt. On the advice of Alan Mann I now cook the cake lower down in the oven and give it about 2 hours.)

loose tin foil on top of the cake will stop burning too

To the people who asked for this recipe at Brecon, here it is. I git it from a booklet which Bero produce and which you occasionally see in supermarkets. It's well worth picking up a copy if you see one, lots of good practical recipes. Bon Apetit
